IHG Way of Clean
We have a long-standing commitment to rigorous cleaning procedures and launched our IHG Way of Clean program in 2015 – developed in partnership with Ecolab and Diversey – both world leaders in hygiene and cleaning technologies and services. This program is now being expanded with additional COVID-19 protocols and best practices – many of which are already in place – to reflect the advice of the World Health Organization, Centers for Disease Control & Prevention and local public health authorities in markets around the world.
Supporting the Wellbeing of Guests and Colleagues
Enabling the personal wellbeing of guests and colleagues is key. IHG is working closely with a team of medical experts at the world-renowned Cleveland Clinic to develop guidance and resources for hotel teams on returning to work and keeping guests safe in this new environment, which may include:
- Cleanliness information in hotels and on IHG’s booking channels
- Social distancing operating procedures and signage
- Guidance on the use of protective equipment as necessary by hotel colleagues
- Updated colleague training and certification
- Availability of individual guest amenity cleaning kits
- Hand sanitizer and disinfecting wipes available in guest rooms and at high-touch points throughout hotels
Good isn’t good enough – we’re committed to high levels of cleanliness. That means clean, well maintained, clutter free rooms that meet our standards. If this isn’t what you find when you check-in then we promise to make it right.
**As a precautionary measure to safeguard our team and our guests, IHG (InterContinental Hotels Group) has decided that all hotel colleagues will wear face masks to mitigate the current heightened risk of community transmission in some areas of New South Wales and Victoria.**

given time. We apologise if your preferred dining time is not available and thank you in advance for your patience as we
navigate these new trading restrictions.
Hotel Dining and Drinks
Shutters Restaurant: A new restaurant that merges stunning views of our beloved Coogee beach with tastes of the Mediterranean.
Our bar and terrace area will be open for breakfast from 7:00am – 10:00am each day (a la carte only). Shutters will be closed from 11am on weekdays but open throughout the weekend for bar service. Note* Shutters bar will be open from 10am - 9pm on Sunday 4th October and between 10am - 2pm on Monday 5th October 2020.
In-Room Dining: Our in-room dining menu is currently available from (7:00am - 10:00am, 12:00pm - 2:00pm, 5:00pm - 9:00pm - daily).
Note: Minibar items have been removed from our guest rooms to reduce any unnecessary risk of contamination. Minibar items can be purchased from Shutters Restaurant.
If you have breakfast included in your accommodation package, this can be enjoyed in Shutters Restaurant (ground floor).
Estate Kitchen: The most sophisticated of the three-venues, Kitchen embraces local seafood among classic favourites.
Estate Kitchen is open for dinner Thursday – Sunday nights from (5:30pm - late) and is open for lunch on Saturday and Sunday from (12:00pm - 3:00pm)
Estate Taqueria: This next generation cantina is brought to life with eccentric patterns, neon lights and bursts of blue and yellow furniture.
Estate Taqueria is currently open from Tuesday - Wednesday (4:00pm - late); Thursday - Sunday (12:00pm - late). *Walk-ins only
The Terrace is open Thursday & Friday (4:00pm - late); Saturday/Sunday (12:00pm - late) *Walk-ins only
Note: Our restaurants and bars are currently opening in a phased manner in adherence to State Government direction.

Update to Hotel Facilities
The hotel pool is open (no more than 20 guests to use at any one time); our gymnasium (level one) is also open and are currently adhering to strict physical social distancing standards.
Current Building, Painting & Maintenance Works
Please note we are currently completing upgrades to our guest room balconies, which includes painting of the external façade of the building. During this period any noisy works will be completed Monday – Friday between the hours of 8:30am - 5:00pm and on Saturday’s between 09:30am - 3:00pm. There will be abseilers completing painting work during this time but will ensure they operate with as little disruption as possible. If you have any concerns please do not hesitate to contact the Manager on Duty.

Covid Safe Meeting Technology
The newly renovated event spaces are ready for your next event. As more and more Australian Meeting & Event organisers look to minimise risk and hold their events at home this year, the new-look hotel is inviting delegates to head beachside and meet safely with its brand new content-sharing technology. As part of recent multi-million dollar renovation, a custom-built AV solution was installed to easily and simultaneously connect all of the hotels’ 11 meeting rooms, and share content. The tech solution is perfect for clients looking to safely distance their delegates across multiple meeting spaces.
